A deliciously healthy fruit pie recipe
What you’ll need:
- 1 1/2 cups warm water
- 2 tablespoons unflavored gelatin
- 1/2 teaspoon lemon extract 1/2 teaspoon lemon peel
- vegetable cooking spray
- 2 tablespoons graham cracker crumbs 2 fresh peaches, peeled and sliced
- 2 cups fresh strawberries, sliced
- 2 cups fresh blueberries
- lemon slices
In a 4 cup measure, combine water and gelatin. Microwave on high 1 to 1-1/2 minutes or until mixture is heated and gelatin dissolves. Stir in lemon extract (use lemon juice if you have no extract) and lemon peel. Set aside.
Spray a 9-inch pie plate. Sprinkle graham cracker crumbs over bottom and sides of plate.
Layer slices peaches in pie plate. Top with 1/3 of gelatin mixture, then strawberries and blueberries. Cover with remaining gelatin mixture.
Refrigerate about 2 – 4 hours or until completely set. Garnish with lemon slices. Enjoy.
